A catch-weight product still sells the way your buyers order it, by the each or by the case, but the price is a per-lb rate multiplied by weight. Until your crew weighs the line, every number the buyer sees is clearly labeled as an estimate: on the storefront, in the cart, on the confirmation, on the invoice.
At fulfillment, staff enter the actual weight once per line, and the invoice and its PDF regenerate from the actuals. The buyer pays for 81.3 lb because you shipped 81.3 lb.

Can retail shoppers buy catch-weight items at checkout?+
No. Catch-weight items in Minori Midori sell on wholesale net-terms orders only, where the invoice can wait for the actual weight. Card checkout and guest checkout never include them, because charging a card before the weight is known would mean charging a guess. Recurring channels (standing orders and subscription boxes) exclude them for the same reason.
